Thanks for the suggestion — there is a way to hide all other layers but only with one layer at a time and this isn't the menus, so this particular feature wouldn't be too difficult to do.
In the meantime, here's (relatively) quick workaround that will achieve what you're looking for:
1. Select multiple layers
2. Press the Command-G keyboard shortcuts to group them
3. In the layers sidebar, Option-click the new group's layer visibility icon
4. Press the Command-Z shortcut twice to undo both previous changes to go back to the previous state
Hopefully, that helps at least a little.
